You can cure eggplant with salt. If you don't cure it, it can take for ever to bake. You want it to be broken down if you are preparing a lasagne. Baking it doesn't soften it, unless you cure it first.
If you cut it in to small chunks you can sauté it in olive oil and it will be tender enough.
